1 cup shredded cheddar cheese (or Monterey Jack/Pepper Jack)
2 tbsp olive oil (or vegetable oil/melted butter)
½ cup sour cream (or Greek yogurt)
Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the diced potatoes with olive oil and ranch seasoning. Mix well until the potatoes are evenly coated.
Spread the seasoned potatoes in a single layer on a baking sheet. Bake in the preheated oven for about 25 minutes or until they start to turn golden brown and crispy.
While the potatoes are baking, slice the smoked sausage into ½-inch rounds. In a skillet over medium heat, sauté the sausage until browned (about 5-7 minutes).
Once the potatoes are done, remove them from the oven and add the browned sausage to the baking sheet, mixing gently.
Sprinkle the shredded cheese on top and return the baking sheet to the oven. Bake for an additional 5-10 minutes, until the cheese is bubbly and golden.
Remove from the oven, and drizzle sour cream over the top and serve immediately!
