4 cups cooked chicken, shredded or diced
4 cups potatoes, peeled and cubed
1 cup sour cream
1 cup shredded cheese (cheddar is a classic choice)
1 can (10.5 oz) cream of chicken soup
1 cup frozen mixed vegetables (peas and carrots work well)
1 teaspoon garlic powder
Salt and pepper to taste
1 cup crushed crackers or breadcrumbs (for topping)
3 tablespoons butter, melted
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, combine cooked chicken, cubed potatoes, sour cream, shredded cheese, cream of chicken soup, frozen vegetables, and garlic powder. Season with salt and pepper to taste. Stir until mixed.
Spread the mixture into a greased 9×13-inch casserole dish.
Combine crushed crackers or breadcrumbs with melted butter and sprinkle evenly over the top of the casserole.
