Ingredients
– 1 cup cooked brown rice
– 2 cups cooked, shredded rotisserie chicken
– 1 can (15 oz) sweet corn, drained and rinsed
– 1 avocado, diced
– 1/2 cup crumbled queso fresco or feta cheese
– 1/4 cup fresh cilantro, chopped
– 1/2 cup cherry tomatoes, halved
– 1 lime, juiced
– 1 teaspoon chili powder
– 1/2 teaspoon cumin
– Salt and pepper to taste
– Olive oil
Instructions
