  • 1 can (13.5 oz) Coconut milk (Light coconut milk)
  • 3 cups Mixed vegetables (e.g., bell peppers, spinach) (Any seasonal veggies)
  • Salt and pepper to taste (Herbs for extra flavor)

  • Instructions

  • In a large pot, heat the olive oil over medium heat.
  • Add diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.
  • Mix in sliced carrots and diced celery, and cook for another 5 minutes until the vegetables begin to soften.
  • Add the vegetable broth to the pot and bring it to a boil. Once boiling, reduce the heat to simmer.
  • Stir in the mixed vegetables and coconut milk. Allow the soup to simmer for 10 minutes, or until all the vegetables are tender.
  • Taste and season the soup with salt and pepper. If desired, add your favorite herbs for extra flavor.
