4 cups fresh peaches, peeled and sliced (or canned if you’re in a pinch!)
1 cup sugar (divided)
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 tablespoon cornstarch
1 cup all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1/2 cup unsalted butter, melted
Cinnamon and nutmeg for sprinkling (optional, but highly recommended!)
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the sliced peaches, 1/2 cup of sugar, lemon juice, vanilla extract, and cornstarch. Toss everything gently until the peaches are well-coated.
In another bowl, mix together the flour, remaining sugar, baking powder, and salt. Gradually whisk in the milk and melted butter until you have a lovely batter.
Pour the batter into a greased 9×13 inch baking dish. Spoon the peach mixture over the batter, spreading it evenly.
