1 lb beef sirloin tips
4 tablespoons unsalted butter
4 cloves garlic, minced
Salt and pepper, to taste
1 tablespoon fresh parsley, chopped (for garnish)
8 oz rigatoni pasta
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 cup heavy cream
Instructions
In a large pot, bring salted water to a boil and cook the rigatoni until al dente, according to package instructions. Once done, drain and set aside.
While the pasta is cooking, heat 2 tablespoons of butter in a large skillet over medium-high heat. Season the beef sirloin tips with salt and pepper, then add them to the skillet. Sear for about 3-4 minutes on each side until they’re beautifully browned and cooked to your liking. Remove them from the skillet and set aside.
In the same skillet, add the remaining 2 tablespoons of butter and the minced garlic. Sauté for about 30 seconds.
Add the heavy cream and let it simmer for a couple of minutes, then stir in the mozzarella and Parmesan until it’s gooey and smooth. Add the cooked rigatoni and steak back into the pan, tossing everything until it’s coated in the sauce.
Garnish your dish with chopped parsley for a pop of color and serve hot.
