Ingredients
Scale
1 cup whole wheat flour (or all-purpose flour)
2 tsp baking powder (or 1 tsp baking soda)
1 cup pumpkin puree (or applesauce)
1 tsp cinnamon (or 1/2 tsp nutmeg)
1 cup milk (or almond milk)
2 large eggs (or flax eggs)
2 tbsp granulated sugar (or honey or maple syrup)
Instructions
Prepare the Pumpkin Mixture: In a mixing bowl, combine the pumpkin puree, eggs, milk, and sugar. Whisk together until smooth.
Combine Dry Ingredients: In a separate bowl, mix the whole wheat flour, baking powder, and cinnamon until evenly distributed.
Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid over-mixing; a few lumps are okay!
Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray.
Pancake Time: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for around 3 minutes or until bubbles form on the surface, then flip and cook for an additional 2 minutes until golden brown.
Serve: Stack the pancakes and let the kids decorate them with their favorite toppings! Serve warm with maple syrup.
