4 medium potatoes, peeled and grated
1 medium onion, diced
2 cloves garlic, minced
1 beaten egg
1 cup shredded cheese (cheddar or mozzarella)
2 tbsp olive oil

Instructions
Start by peeling and grating the potatoes. Rinse them in cold water and place them on a clean kitchen towel to remove excess moisture.
In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
In a large mixing bowl, combine the grated potatoes, sautéed onions and garlic, beaten egg, and shredded cheese. Season with salt and pepper to taste.
Shape the mixture into small patties (about 2-3 inches wide). This should yield approximately 8-10 hash browns.
Place the patties in the hot skillet, flattening them slightly. Cook for about 4-5 minutes on each side until golden brown and crispy.
