3 cups shredded cooked chicken
6–8 low-carb tortillas
8 oz cream cheese
1 can (14.5 oz) diced tomatoes with green chilies
2 cups shredded cheese
1 tbsp chili powder
Instructions
Preheat your oven to 350°F (175°C). Grease your casserole dish lightly.
In a mixing bowl, combine the shredded chicken, cream cheese, chili powder, and half of the diced tomatoes with green chilies. Mix until well combined.
Start by spreading a thin layer of the remaining diced tomatoes on the bottom of the casserole dish. Layer tortillas, followed by half of the chicken mixture, and a sprinkle of cheese. Repeat until reaching the top, finishing with a layer of tortillas and the remaining cheese.
Cover the casserole with foil, and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
Let the casserole cool for a few minutes before slicing. Top with fresh cilantro or avocado if desired, and enjoy!
