8 oz fettuccine pasta
1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
4 cloves garlic, minced
1 cup heavy cream
1 cup grated Parmesan cheese
1 cup baby spinach
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Red pepper flakes (optional)
Instructions
In a large skillet over medium heat, heat the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant.
Add the shrimp to the skillet, seasoning with salt and pepper. Cook for 2-3 minutes, flipping occasionally, until the shrimp turn pink.
Remove the shrimp from the pan and set aside.
In the same skillet, add the fettuccine and enough water to cover the pasta. Bring it to a boil and cook according to the package instructions until al dente.
Lower the heat and stir in the heavy cream and Parmesan cheese, mixing until you have a luscious sauce.
Fold in the baby spinach and cooked shrimp. Cook for an additional 2-3 minutes until everything is heated through and the spinach is wilted.
Serve immediately, garnished with fresh parsley and red pepper flakes if desired.
