  • 1 cup mashed bananas (about 2 medium bananas)
  • 1 cup diced peaches (fresh or canned, drained)
  • 1 teaspoon vanilla extract

  • Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In another bowl, mix together the sugar and the melted butter. Once combined, add the egg, mashed bananas, and vanilla extract. Stir until smooth and creamy.
  • Gently fold the wet ingredients into the dry ingredients, being careful not to overmix. A few lumps are totally fine.
  • Fold in the diced peaches.
