  • Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a separate bowl, cream the softened butter with the sugar until it’s light and fluffy—about 3-4 minutes.
  • Add in the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract.
  • Slowly alternate adding the dry mixture and the buttermilk to the butter mixture.
  • Gently fold in the fresh peaches.
  • Pour the batter into your lined muffin tin, filling each cup about 2/3 full. Bake for 18-20 minutes, or until a toothpick comes out clean.
