1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
1 cup sugar, divided
4 (8 oz) packages cream cheese, softened
1 teaspoon vanilla extract
4 large eggs
2 cups fresh peaches, peeled and sliced
½ cup heavy cream
Instructions
Preheat your oven to 325°F (or 160°C).
In a bowl, mix your graham cracker crumbs with the melted butter and ½ cup of sugar until well combined.
Press the crumb mixture into the bottom of a greased 9×13-inch baking dish.
In another bowl, beat together the softened cream cheese and remaining ½ cup of sugar until smooth and creamy. Add in the vanilla extract and beat again.
Incorporate the eggs one at a time into the cream cheese mixture.
Pour the cheesecake mixture over the crust in the baking dish and gently place the sliced peaches on top.
Bake for about 45-50 minutes, or until the center is set but slightly jiggly.
Let the cheesecake cool at room temperature, then chill it in the refrigerator for at least 4 hours (or overnight).
Before serving, whip the heavy cream and spread it over the top of the cheesecake, then slice into bars and serve.
