2 cups of cooked rice
1 pound of boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon of olive oil
1 cup of fresh pineapple chunks
1 bell pepper, chopped
1 small onion, diced
2 cloves of garlic, minced
1/4 cup of soy sauce
1 tablespoon of honey
Salt and pepper to taste
Green onions for garnish
Instructions
In a large skillet over medium-high heat, add the olive oil. Once it’s hot, toss in the chicken pieces. Season with salt and pepper. Sauté until golden brown and cooked through, about 7-8 minutes.
