2 cups all-purpose flour
1 cup canned pumpkin puree
1 cup sugar
1 tsp baking powder
1/2 tsp baking soda
2 tsp ground cinnamon
2 large eggs
1/2 cup vegetable oil
4 oz cream cheese, softened
Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and cinnamon.
In another bowl, blend the pumpkin puree, eggs, and vegetable oil until well combined.
Gradually mix the wet ingredients into the dry ingredients until just combined. Avoid overmixing!
In a separate bowl, beat the softened cream cheese until smooth. If you’re adding any additional ingredients, you can fold them in now.
Scoop about 2 tablespoons of the muffin batter into each muffin liner, then add a teaspoon of the cream cheese mixture on top. Cover with more muffin batter until the liner is almost full.
Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack.
