  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and cinnamon.
  • In another bowl, blend the pumpkin puree, eggs, and vegetable oil until well combined.
  • Gradually mix the wet ingredients into the dry ingredients until just combined. Avoid overmixing!
  • In a separate bowl, beat the softened cream cheese until smooth. If you’re adding any additional ingredients, you can fold them in now.
  • Scoop about 2 tablespoons of the muffin batter into each muffin liner, then add a teaspoon of the cream cheese mixture on top. Cover with more muffin batter until the liner is almost full.
  • Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
  • Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack.
