1 ½ cups Rolled Oats
½ cup Almond Butter
¼ cup Honey or Maple Syrup
1 tsp Cinnamon
1 tsp Vanilla Extract
1 tsp Baking Powder
½ tsp Salt
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine pumpkin puree, almond butter, honey or maple syrup, and vanilla extract. Stir until well blended.
In a separate bowl, mix rolled oats, cinnamon, baking powder, and salt. Gradually add to the wet ingredients and stir until just combined.
Using a spoon or cookie scoop, portion dough onto the prepared baking sheet, spacing them 2 inches apart.
Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown. Allow them to cool for a few minutes on the baking sheet before transferring them to a wire rack.
