1 cup Pumpkin puree (substitute with Sweet potato puree)
3/4 cup Sugar (substitute with Brown sugar or honey)
1 1/2 cups Flour (substitute with Whole wheat flour)
1 tsp Baking powder (substitute with Baking soda)
2 large Eggs (substitute with Flax egg for vegan)
8 oz Cream cheese (substitute with Ricotta cheese or Greek yogurt)
Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
In a large bowl, mix the pumpkin puree, sugar, and eggs until well combined.
In another bowl, whisk together the flour, baking powder, and spices (cinnamon and nutmeg).
Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined. Be careful not to overmix!
For the cream cheese filling, beat the cream cheese until smooth, then add a bit of sugar for sweetness.
Fill each muffin cup about halfway with the pumpkin batter, then drop in a spoonful of the cream cheese mixture. Finally, top with more pumpkin batter to fill each cup.
Swirl the cream cheese layer slightly with a toothpick for a marbled effect.
Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Let the muffins cool before removing them from the pan.
