  • 1 1/2 cups Flour (substitute with Whole wheat flour)
  • 1 tsp Baking powder (substitute with Baking soda)
  • 2 large Eggs (substitute with Flax egg for vegan)
  • 8 oz Cream cheese (substitute with Ricotta cheese or Greek yogurt)

  • Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  • In a large bowl, mix the pumpkin puree, sugar, and eggs until well combined.
  • In another bowl, whisk together the flour, baking powder, and spices (cinnamon and nutmeg).
  • Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined. Be careful not to overmix!
  • For the cream cheese filling, beat the cream cheese until smooth, then add a bit of sugar for sweetness.
  • Fill each muffin cup about halfway with the pumpkin batter, then drop in a spoonful of the cream cheese mixture. Finally, top with more pumpkin batter to fill each cup.
  • Swirl the cream cheese layer slightly with a toothpick for a marbled effect.
