- 1 cup water
- 1 cup heavy cream
- 1 tablespoon lemon juice

- In a small saucepan, combine the sugar and water. Heat over medium, stirring until the sugar is completely dissolved. Let it cool.
- If you’re using fresh raspberries, rinse and pat them dry. Then, toss them in a blender with the cooled syrup, lemon juice, and salt. Blend until smooth.
- Strain the raspberry mixture through a fine mesh sieve to remove the seeds, collecting the vibrant puree in a bowl.
- In a separate bowl, whisk the heavy cream until it’s soft and fluffy, then gently fold in the raspberry puree.
- Pour the mixture into a shallow dish and freeze for about 4-6 hours, or until it’s firm.
- When you’re ready to serve, let the sherbet sit at room temperature for a few minutes before scooping. Enjoy the burst of raspberry goodness!
