- 1 pound of Italian sausage (or your favorite kind)
- 4 medium-sized potatoes, diced
- 2 cups of seasonal spring vegetables (think asparagus, green beans, or peas)
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup of shredded cheese (Cheddar works great!)
- 1 can of cream of mushroom soup
- Salt and pepper, to taste
- Olive oil, for drizzling
Instructions
- Preheat your oven: Set it to a cozy 375°F (190°C). This is key for perfect cooking!
- Brown the sausage: In a large skillet, heat a drizzle of olive oil over medium heat. Toss in the sausage and cook until it’s nice and browned. Remove from heat and let it cool for a bit.
- Sauté the veggies: In the same skillet, add the onion and garlic. Sauté them for around 3-4 minutes until they’re soft and aromatic. Add in the spring veggies and stir for another minute or two.
- Combine and mix: In a large mixing bowl, combine your browned sausage, sautéed veggies, diced potatoes, and cream of mushroom soup. Season generously with salt and pepper. Mix until everything is well coated.
- Transfer to a baking dish: Pour your mixture into a greased casserole dish. Spread it out nicely and top with the shredded cheese.
- Bake: Pop it in the oven and bake for about 40-45 minutes. You want the potatoes to be fork-tender and the cheese all gooey and melted.
