3 pounds of potatoes (Yukon Gold or red potatoes are perfect)
3 large hard-boiled eggs, chopped
1 cup of mayonnaise
1 tablespoon of yellow mustard
1 tablespoon of apple cider vinegar
1 cup of chopped celery
1 cup of chopped green onions
1 teaspoon of salt (or to taste)
1/2 teaspoon of black pepper
1 teaspoon of garlic powder (optional)
A sprinkle of paprika for garnish
Instructions
Boil the Potatoes: Start by washing and peeling the potatoes if preferred. Cut them into bite-sized chunks and place them in salted water. Bring to a boil and cook until tender, about 15-20 minutes.
