2 cups fresh strawberries, hulled and sliced
1/4 cup granulated sugar
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup unsalted butter, cold and cubed
1 cup heavy cream, plus more for whipping
1 tablespoon vanilla extract
Instructions
In a bowl, mix your sliced strawberries with 2 tablespoons of sugar. Set them aside for about 30 minutes.
Preheat your oven to 425°F (220°C). In a large bowl, combine flour, baking powder, and salt. Add in the cubed cold butter and mix until it resembles coarse crumbs.
Stir in the heavy cream and vanilla extract until the dough just comes together.
Turn the dough out onto a floured surface, and gently pat it into a rectangle about 1 inch thick. Cut into rounds or squares.
Place them on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until golden.
