  • 1 lb ground beef (or turkey, if you’re feeling healthy)
  • 1 packet taco seasoning
  • 2 cups tortilla chips
  • 1 cup refried beans
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup shredded lettuce
  • 1/2 cup sour cream (optional)
  • Olive oil for cooking

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • Heat a drizzle of olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, about 5-7 minutes.
  • Add the taco seasoning and a splash of water to the meat. Stir and let it simmer for a few minutes.
  • In a baking dish, spread the refried beans evenly at the bottom, followed by the cooked meat mixture.
