1 pound shrimp, peeled and deveined
2 ripe avocados, diced
1 cup cherry tomatoes, halved
½ red onion, finely chopped
½ cup cucumber, diced
¼ cup fresh cilantro, chopped
2 tablespoons olive oil
1 tablespoon lime juice (plus more for drizzling)
Salt and pepper to taste
Instructions
Start by cooking the shrimp. In a skillet over medium heat, add a splash of olive oil. Toss in the shrimp and season with salt and pepper. Sauté until they turn pink and opaque, about 2-3 minutes per side. Once done, set aside to cool.
