1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
¾ cup granulated sugar
16 oz cream cheese, softened
¼ cup sour cream
1 teaspoon vanilla extract
1 cup blackberries, pureed, plus extra for topping

Instructions
Preheat your oven to 325°F (160°C).
In a bowl, combine graham cracker crumbs, melted butter, and ¼ cup sugar. Press this mixture into the bottom of a 9-inch springform pan.
Bake for about 10 minutes until it’s golden. Remove from oven and set aside to cool.
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in ½ cup sugar, vanilla extract, and sour cream. Mix well.
Combine eggs one at a time, mixing well after each addition. Finally, fold in the blackberry puree until just combined.
Spread the filling evenly over the cooled crust.
Bake for about 50–60 minutes or until the center is slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool slowly for 1 hour.
Refrigerate for at least 4 hours or overnight for best results.
Before serving, top with fresh blackberries and a dusting of powdered sugar if desired.
